The Boondocks episode titled the “Itis” ties very well into our previous unit about the food industry. Especially our focus on soul food and the affects it had on the health of communities. The episode starts off with Grandpa cooking his Sunday meal which included what a lot of African American soul food communities consider delicacies. The meal, called “Grandpa’s Pork Swine Delight”, included “chitterlings, which are pig intestines, two pig knuckles glazed in honey, and pig tongue that was marinated in butter for two days”. During slavery, these parts of the animal were the only thing slaves were given to eat, and as mentioned in the Fast Food Junkies video as well as this Boondocks episode, the parts were considered undesirable parts of the pig that the white slave owners did not want as their meals. African American slaves were able to take the scraps of animals given to them and make it sufficient enough to feed themselves. Yet overtime, while the preparation of Soul Food meals may still be the same, the quality of meat and vegetables that are provided to communities in the grocery stores, as well as excessive consumption of these meals has led to African American communities’ having major health…show more content… As shown in this episode of the Boondocks the consumers of these meals were having rapid and excessive weight gain, heart issues, and were also unable to have an active lifestyle without
