The 7-day challenge that I chose for this assignment is to prepare three low cost, nutrient dense dishes using beans, legumes, dried peas or lentils. I chose this challenge because I believe my family and I are consuming well beyond our bodies need of protein from animal meats, especially red meat. This challenge will require that I replace at least three of my typical meals with dishes using beans, legumes, dried peas or lentils, which I believe will be a huge benefit to myself and my family. I plan on replacing my family’s diner on Tuesday, Thursday, and Friday night with a few new recipes that include Minestrone soup, black bean burrito bowls, and lentil and veggie tostadas.
This menu change shouldn’t affect my schedule much because I have chosen to implement these meal changes on the evenings that I am not attending classes. I believe the time I take to prepare these new diners will be comparable to the amount of time I am taking to prepare one of my typical meals. There also shouldn’t be a drastic impact on my finances when applying these changes as I have chosen recipes with many ingredients typically found in my home already and I should only need to purchase a minimal amount of new ingredients.
