The early spice trade and the modern flavor industry have many differences. Years ago people had few spices such as nutmeg, cloves, and peppercorns. Today, flavorists have any spice or flavor they think of at their fingertips. In the article “A Bloody History” it clearly states that, “Humans have always sought to make their food more appetizing” in the 1700’s people used spices such as cloves, nutmeg, and peppercorns to cure meats and cover up the stomach turning taste of rotting meat. I didn’t mention that a few handfuls of spices could found make a person exceedingly rich.
