Steinbeck creates a change of tone and mood between the beginning of the chapter and the end by contrasting the word choice of the beginning of the chapter and the end of the chapter. He starts the chapter saying, “The spring is beautiful in California. Valleys in which the fruit blossoms are fragrant pink and white waters in a shallow sea” (346), while ending it with, “And they stand still and watch the potatoes float by, listen to the screaming pigs being killed in a ditch and covered with quicklime, watch the mountains of oranges slop down to a putrefying ooze” (349). Steinbeck starts the chapter with words such as “beautiful” and “fragrant” to give the readers to convey a sense of refreshment in California. But as Steinbeck moves to the
