In Kitchen Confidential Anthony Bourdain makes the case that the culinary industry is ugly and has an unseen dark side. He makes this case through his exposure of the hostile commercial kitchen and tricks used by restaurants. Bourdain’s case is supported by his description of the commercial kitchen.
