For the nutrients thiamin, riboflavin, vitamin B12, and phosphorus, there is no known toxicity if the consumption is higher than RDA. High folate intake would only mask the B12 deficiency. Therefore, no concern is needed when vitamin B12 intake is sufficient. Niacin, however, can lead to flushing nausea, rash, and tingling extremities whereas vitamin B6 can induce numbness and nerve damage. Having lots of vitamin C can cause gastrointestinal distress and diarrhea. High dose of copper can be toxic as vomiting can occur. High selenium consumption can result in the problems of nausea, diarrhea, vomiting, fatigue, and hair and nail changes. The high intake of animal products, like poultry, pork, and seafood, and enriched grains cause all of these nutrients to be over 120% RDA.
The only nutrient that is under 67% of the RDA is vitamin D. Although vitamin D can be synthesized in the skin with the aid of ultraviolet light rays, there are many factors that can impair the synthesis of vitamin D in the skin. Thus, vitamin D is now considered a nutrient of concern. When vitamin D is deficient, dietary calcium cannot be absorbed efficiently and there can be improper bone mineralization and abnormalities in bone structure, causing rickets in children and osteomalacia in
