African slaves were brought to the United States in the 1600s, along with their food and cooking styles. They brought foods such as okra, peanuts, black-eyed peas, rice, and sesame seeds. With these foods, the brought many new recipes to America.

The slaves were given small amounts of food for each week and had to learn to makes plates with the food they had such as cornmeal, pork, and vegetables. A lot of dishes were dried and boiled grains from corn such as grits and cornbread and are still made today. Since the 1600s, sweet potatoes and yams have been a large part of the African American diet when they brought them to the United States. The ingredients for sweet potato pie include1: 1 pie shell (9-inch), unbaked 3 medium sweet potatoes, 2 eggs, ½ cup milk, 1½ sticks butter, 1¼ cups sugar, 1 tablespoon flour, 1½ tablespoons lemon extract, and 2 tablespoons nutmeg. The procedure for making sweet potato pie is as follows1: First, wash and scrub the sweet potatoes. Then, place them in a large saucepan and add water to cover them and boil them in their skin until they can be easily pierced with a fork (about 20 minutes).
