FEASIBILITY OF FAMILY –STYLE RESTAURANT: EXPANDING HOURS AM/PM
In August, you requested that I conduct a study of the feasibility of you beginning two new options for your business. The first option was adding a breakfast menu, which would have you open at 6:30am and not 11am. The second was extending your hours, at this point your open till 8pm and would extend to 11pm. You will continue with the business located in Fletcher, North Carolina, with the intention of adding new items to the menu also.
Recommendation
I recommend that you expand on your restaurant by adding your breakfast menu and stay open later. From the one hundred forty-nine questionnaires that were completed it would be beneficial for you to stay open Friday and Saturday with the possibility of working in one more day during the week. The questionnaire that was taken Friday and Saturday will generate a great deal of income from couples and families. The individuals are interested in both the breakfast during the week if you do choose to pick a date and dinner hours. Individuals don’t carry a huge profit as they are only singles. As for the alcohol, live entertainment, I do not recommend that you try to bring this into your restaurant because you are a family restaurant and are not known for this in your business. It is a good idea to incorporate a heart healthy menu into your business to bring in more healthy customers.
Findings
Here are the findings that support my recommendations.
Days that are beneficial and percent that would attend in the first year
To have a breakfast menu it would be a good idea to have it for two days during the week. Families are more interested in your weekend day; these will benefit you in the short and long term picture. You will also generate a great deal of money and customers if you extend you evening hours both on Friday and Saturday. If you do well in the first year it would be wise to have a couple more days a week for breakfast and evenings.
