Food Technology Assessment Task- Term 3

Donna Hay Mascarpone Tart:
This dish is sophisticated and fresh looking due to blue lighting, and shape balance. It is a sweet tart dish that uses colour contrasting in the photograph with a rustic organic look. P- The colour of the vibrant juicy blueberries contrasting with the blue of the background, the garnish of the blueberries, you can see the crumbing which shows crustiness of the pastry.
M- The bird’s eye view takes away the height of the image
I- What I love and find interesting about this is how rustic an organic looking the dish is with it being nicely messy, with blueberries out of place and the crumbs on the bench.

This is a modernised Japanese dish which shows sophistication in its presentation and garnish. It appeals to all sensory factors, with colour, texture and flavour.
P- The presentation is nice and symmetrical, also displaying a variety of colours like green, white, red and yellow. The background doesn’t take away from the dish and it in neutral colours on a sophisticated plate.
M- Some of the colour is hidden behind the pieces.
I-I find interesting the layout of the sushi curving around the plate, and balancing the curve is the textured sauce.

P- This dish provides vivid green, orange and brown colours which stand out due to the neutral background. You can also see the texture of the crunchy toasts. The main feature that makes it look appealing is the height of the dish, adding volume and appeal.
M- Background is unfocused, creating strain on the eyes
I-An interesting thing is the way they have cut and arranged the cucumber on top of the salmon.
