Letter can be both I think, but in most of the case, it is expository, because it does explain reader what will happen or selling.

To tell reader what is the feature of the product, and explain them.
Technical
It is technical because it is written for purpose that can help reader to use their product or features.

It is online place where every document can be in one place.
Technical and expository writing.
Website can be both, because there can be multiple documents in one website.
Other- text message
To send quick message to certain person. technical It is technical because it is usually short message which tell people how to do something.

I am currently working in restaurant, it is hard to say there is a lot of writing involve, but it is mostly expository, because most of the writing is explanation of the food or drink.
